Fresh raspberries popsicles


We’ve been having a heat wave in Montreal, this week-end. So what better time to make some fresh raspberries posicles?

Once again, I found the recipe in Bust magazine and it comes from Lindsay,the Fresher than fresh snowcones owner. If you don’t know her business, I recommend this Design*Sponge interview with her.



2 cups
of fresh raspberries OR blackberries
1 cup of sugar
1 1/4 water

2 tablespoon of fresh or dried lavander (Optionnal but sooo good.)
Juice of 2-3 lemons
Popsciles molds or icecubes trays
(You can poke some coffee sticks in the icecubes trays to make popcicles. Make sure to put some foil between the pops and the sticks so they stay in.)

Bring berries, sugar, lavander (optional) and water to boil. Reduce heat and simmer for 8 minutes.
Mash the ingredients with a potato masher to extract the most juice possible.
Let cool your mix in the refrigerator for 30 minutes.
Remove from fridge and add lemon juice.
If you added the lavander to your mix, make sure your strain your mix through a strainer.
Pour the juice into the popcicle tray.
Put your trays in the freezer for 4 hours and voilà! Fresh pops! Mmmm!
